The Fiesta Brunch is easy and sure to please!  You construct it the night before and then bake it in the morning, which is great for those mornings that you don’t have time to put a dish together.  I served this casserole twice for brunch and people raved about it both times.  I used turkey breakfast sausage to avoid pork and added hot sauce.  Because I was not having a large group, I halved the recipe and put it in a 8″x8″ Pyrex and that worked well. But if you make the full recipe, and in the unlikely event that it doesn’t all get eaten, you can freeze the leftovers.  I plan on making this breakfast again many, many times!
