Rum Cake (Celebrate Colorado, p. 118) Review by: Joan Graham The Rum Cake is a very quick and easy to prepare dessert.  It is fail-proof, classy, and very elegant tasting.  Great for parties!!  The rum adds just the right flavor.  All ingredients are combined in a bowl and baked in a Bundt pan – start to finish takes less than an hour.

Mandarin Salad (West of the Rockies, p. 69) Review by: Janelle Meyer This salad is delicious any time of the year and is a favorite of mine. Your dinner guests and family will rave about it!!  It can be made ahead – just add the dressing, oranges, and almonds before serving.  This recipe was compliments of “Colorado Cache” from The Junior League of Denver.
